皇牌香檳使用50至60種來自特級與頂級葡萄園的優質葡萄釀造而成：50~60%黑皮諾葡萄、15~20%皮諾莫尼耶紅葡萄、28~33%夏多內白葡萄，每年比例均依葡萄狀況稍作調整。凱歌香檳釀酒師的工作就是讓香檳維持一致品質，因此皇牌香檳獨特的色澤、風味歷年來都達到完美的水準。不惜使用珍貴的典藏酒維持香檳品質，使用量25-30%不等，有時甚至使用到40%，目的就是要達到凱歌香檳應有的水準。
